cucumbers contain many important vitamins and minerals, as well as a high water content. Eating cucumbers may lead to many potential health benefits, including weight loss, balanced hydration, digestive regularity and lower blood sugar levels.

INGREDIENTS
10 large beets (peeled + 1/4 inch diced)
2-4 tbsp sesame oil
1-2 tsp sea salt
1/4 cup lime juice
1 cup coconut aminos
4 cups julienne rainbow carrots
4 cups julienne cucumbers
1 cup unseasoned rice vinegar
garnish: everything seasoning
chopped scallion
watermelon radish
avocado slices
METHOD
Toss diced beets in oil and salt and spread in a single layer on baking sheet.
Roast @ 450 for 60 mins then let beets cool.
Place in shallow bowl/dish and combine with coconut aminos + lime juice.
Let marinate for at least 1 hour.
Combine julienne rainbow carrots + julienne cucumbers + unseasoned rice vinegar.
Add 1/2 tbsp salt and let marinate 1 hour.
Divide veggies and top with beets.
Finish with everything seasoning, fresh avocado slices & watermelon radish.
