lemon juice is an excellent source of vitamin c and has health promoting effects such as lower blood pressure, cancer prevention, aids in digestion and weight loss, and clears skin.
natural sea salt contains sodium and potassium, both of which help to release retained water and reduce inflammation.
coconut oil contains a unique combination of fatty acids that have been shown to help support healthy brain function.
thyme contains chemicals that might help bacterial and fungal infections, and also might help relieve coughing while having antioxidant effects.
INGREDIENTS
1 pack (4) organic chicken thighs
2 tbsp coconut oil
8 oz chicken stock
1 tbsp dried thyme
1 tbsp parsley
1 tbsp SalterieOne sea salt
1 lemon (cut in half)
METHOD
Heat 2 tbsp coconut oil in a large pan over medium-high heat.
Place the chicken thighs into the pan (skin side down), and continue cooking for 5-10 minutes or until skin is golden and crispy.
Flip chicken thighs. Add 8 oz chicken stock to the pan and reduce to low heat.
Add dried thyme +parsley to the both. Sprinkle sea salt directly over the chicken thighs.
Add one lemon, cut in half.
Bring to boil and cover. Cook for 30 minutes, or until internal temperature reaches 160 degrees.
Remove chicken from pan and increase heat to high and let cook for 5-10 minutes until sauce has thickened.
Meanwhile, place chicken thighs on a sheet pan and broil on low on the top rack for approximately 5 minutes, or until skin is crispy and internal temperature reaches 165 degrees.
Place chicken back in pan, cover in sauce, and serve.
